Some sun dried tomatoes, and mix in a bag of chopped lettuce, and dinner is ready. High in carbs, a bit more salt then I prefer, but not bad for a quick fix.

I love these Lundberg Risotto's! Vegan varieties available, easy to prepare and great taste. I just mix in fresh veggies when cooking and it makes a hearty meal. They are also great for backpacking!
